Skies 322 is deeply honored to be able to build upon the foundation he laid in establishing the Grand Forks fine dining scene, with much of our team having come up under Kim during his years at Sanders 1907. We are proud to know that his legacy lives on.

His Influence

His appreciation of dining and service influenced decades of now-industry leaders in the Grand Forks and greater Midwestern food scene. When Kim passed in 2022, the outpouring of love and respect from former employees, guests, and community at large were testament not only to his reputation, but to his presence and personality.

Skies 322 had its start as Sanders 1907, restaurateur Kim Holmes’ legendary restaurant located on South Third Street in Downtown Grand Forks. An approachable, warm, and inclusive take on fine dining, Kim believed deeply that everyone was deserving of good food and good hospitality.

Justin Welsh

Justin Welsh is from Grand Forks, ND, and has over 28 years of experience in the culinary industry. After completing his culinary degree from the Western Culinary Institute/Le Cordon Bleu in Portland, OR, he embarked on his culinary journey at the age of 15 as a dishwasher and busboy. He later found his passion in the kitchen and started working as a chef at 16. Chef Justin's culinary prowess shines through in every dish he meticulously creates, capturing flavors and elevating ingredients to new heights.
